Ingredients for Canopies
- 6 Fresh bread slices
- Butter as desired
- A pinch of salt
- 2 medium size boiled potato chopped into small pieces
- 1/2 cup boiled peas
- 1 finely chopped capsicum
- 1 finely chopped tomato
- 1 finely diced carrot
- 1 tsp salt
- 1/4 tsp pepper
- 4 tsp chopped coriander
- 4-5 tsp cream
- 2 cheese cubes,grated
- 4-5 tsp tomato ketchup
- Spread butter lightly on all the slices and grease the molds.
- Press one slice in each mold so that it acquires the same shape as that of mold.
- Trim the extra portions.
- Repeat the process for all the slices.
- Preheat the oven at 200 degree Celsius for 8 to 10 minutes and bake the canopies till brown and crisp.
- Loosen the sides and take out the canopies.
- Mix all the Ingredients given for the filling with exception of ketchup, in a bowl.
- Fill the bread canopies with the filling and add a dash of ketchup on top of each.
- Bake them again for 5 minutes.
- Serve on the bed of lettuce and with potato wafers.
