Recipe of Chicken Piri Piri

Ingredients
  • 1 Whole chicken
  • 6 Red chillies
  • 1 tbsp Chopped Garlic
  • 1/2 tsp Oregano
  • 1/2 tsp Paprika
  • 100 ml Olive oil
  • 50 ml of Red Wine vinegar
  • Salt according to taste
Method
  1. Preheat the oven at 180 degree Celsius and roast the chillies on a resting tray for 10 minutes.
  2. Allow the chillies to cool down
  3. Then chop the chillies into small pieces.
  4. Now take a sauce pan and mix olive oil, red wine vinegar, garlic, paprika, oregano and rest chillies including seeds into it.
  5. Put it all on medium heat and sprinkle some salt over it.
  6. Now cool down the sauce for few minutes and blend it into puree.
  7. Now place the chicken in the large bowl and pour the sauce over it
  8. Make sure that all the surface of the chicken will marinate well
  9. Now seal the chicken with cling film and leave it in the fridge to marinate for about an hour.
  10. Preheat the oven at 200 degree Celsius.
  11. Remove the cling film and place the chicken in baking tray.
  12. Roast the chicken for 1- 1 1/2 hours.
  13. Baste the chicken occasionally with remaining Piri Piri sauce.
  14. Now insert a knife in the chicken to weather its cook or not. If no liquid is coming out then its cooked.
  15. Serve this hot with fresh salad or sauce of your own choice.
