Recipe of Canopies

Serves 5-6 Person
Ingredients for Canopies
  • 6 Fresh bread slices
  • Butter as desired
  • A pinch of salt
Ingredients For Filling
  • 2 medium size boiled potato chopped into small pieces
  • 1/2 cup boiled peas
  • 1 finely chopped capsicum
  • 1 finely chopped tomato
  • 1 finely diced carrot
  • 1 tsp salt
  • 1/4 tsp pepper
  • 4 tsp chopped coriander
  • 4-5 tsp cream
  • 2 cheese cubes,grated 
  • 4-5 tsp tomato ketchup
Method
  1. Spread butter lightly on all the slices and grease the molds.
  2. Press one slice in each mold so that it acquires the same shape as that of mold.
  3. Trim the extra portions.
  4. Repeat the process for all the slices.
  5. Preheat the oven at 200 degree Celsius for 8 to 10 minutes and bake the canopies till brown and crisp.
  6. Loosen the sides and take out the canopies.
Method For Filling
  1. Mix all the Ingredients given for the filling with exception of  ketchup, in a bowl.
  2. Fill the bread canopies with the filling and add a dash of ketchup on top of each.
  3. Bake them again for 5 minutes.
  4. Serve on the bed of lettuce and with potato wafers.
